General Descriptions:

A. Novice

A Basic Beginner's Course for the student who has yet to enter the world of cake decorating

  • Making buttercream the correct way
  • Applications of buttercream icing
  • Piping skills including shells, stars, rosettes, leaves
  • Two colour piping
  • Introduction to sugarpaste,  including colouring and marbling
  • Simple applique 

B. ADVANCED

An introduction to royal icing, either once the basic skills have been acquired in the buttercream course or a knowledge of piping techniques.

  • Basic piping skills, including snails trail, shell borders, side designs and simple embroidery
  • Crimping techiques and overpiping
  • Writing techniques
  • Simple piped flowers and leaves

C. SUGARPASTE AND MODELLED FLOWERS

  • Covering of a cake with marzipan and sugarpaste
  • Understanding the principles of balance, proportion and colour in cake decorating
  • Simple modelled flowers - rose, lily, daisy, blossoms, pulled flowers and leaves
  • A simple spray of flowers

D.  MODELLING

  • Basic foundation shapes for modeling
  • Proportions
  • Simple animals
  • Cartoon character, eg. Barney, Noddy
  • Fairy
